Four Pillars Gin
Four Pillars is probably the most recognised Australian gin currently on the market, and flies off the shelf for good reason.
Created in Yarra Yarra valley, it is made with ‘4 pillars’ in mind – the still, the water, the botanicals and love, hence the name. Four gins from Four Pillars form the foundations of our May Real Deal. Four Pillars Rare Dry Gin
The Rare Dry Gin uses 10 botanicals, some of which are local (Tasminain pepperberry, lemon myrtle, and whole oranges). Lemon myrtle is a common ingredient used by most Australian gins to replace lemon. On the nose, light and sweet notes of juniper with fresh citrus and hints of mint. Candied notes of peel and warm woody spice develop on the palate. Dry finish with lasting notes of liquorice and lemon. Delicious oily visocity.
Four Pillars Spiced Negroni
The Spiced Negroni Gin is the first gin designed to be made into a Negroni. This is done by boosting the amount of Tasmanian pepperberry leaf and cinnamon, and adding Grains of Paradise, organic blood orange and ginger. These all work in tandem to help complement the bitterness that the Campari brings to the cocktail. Familar spice nose with hits of rhubarb and woody spice, which then becomes warming spice with ginger and cinnamon. Long oily finish with hints of orange. Perfect as you would expect in a Negroni.
Four Pillars Navy Strength
Coming in at a hefty 58.8% ABV, the Navy Strength gin uses the same botanical mix as the Rare Dry, but with added native Finger limes (for a zesty zing), local ginger (provides spice and lifts all the other botanicals) and Nepalese Tumeric (adds weight and eateriness to the palate). Big and bold with high citrus and freshness from the Finger Limes.
Four Pillars Bloody Shiraz
Those amazing guys from Four Pillars take Shiraz grapes steep it in the Rare gin for 8 weeks and then press them. Mix back into the gin and viola, Bloody Shiraz gin. Lots of red fruit sweetness up front, though festive spice notes shine through. On the palate piney juniper, raspberry, plum, a pinch of peppercorn and just a smidge of citrus zest. Earthy clove and spicy ginger, with lingering red berry on the finish. Great mixed with Yuzu Tonic. Or in a Red Snapper!
